Sorbitol is a natural occurring ingredient found in edible fruits. It is used as a humectant due to its’ ability to retain moisture. Its’ stabilising properties are used in the production of various confectionery, baked goods and products that tend to become easily dry or stale. It can withstand high temperatures (particularly in baking) and is very stable.
