Nitto Jozo’s Shiro White Shoyu is a rare, soy-free Japanese white soy sauce made from locally grown wheat, Japanese sea salt, mountain spring water, and Koji. With no soybeans used, it takes on a pale golden hue and a light, gently sweet flavour with notes of malt, Koji, and white miso. Brewed slowly in century-old cedar barrels at Nitto Jozo’s historic mountain brewery in Aichi Prefecture, it reflects generations of craftsmanship and a deep respect for natural fermentation.

Delicate and refined, Shiro Shoyu enhances ingredients without overpowering them. Try it whisked into a vinaigrette with citrus and sesame oil, drizzled over sashimi, or as a finishing touch for steamed vegetables or chilled noodles. It also adds subtle umami to Japanese dishes like chawanmushi (savoury egg custard), sunomono (vinegared salads), or clear soups.
