Nice & Crisp Powder is a natural plant-based hydrocolloid powder made from acacia gum, also known as gum arabic (E414). This versatile ingredient acts as an essential texturiser, binder, and emulsifier. Due to its naturally low viscosity, it dissolves completely and cleanly in both hot and cold liquids without forming thick gels, making it exceptionally easy to work into any wet or dry recipe without making the mixture gummy.
True to its name, Nice & Crisp is a secret weapon for fried foods and tempura. When added to batter recipes at 10–25% of the total flour weight, it creates a protective moisture barrier that significantly reduces oil absorption during frying.
