Formed by natural fermentation in products such as cheese, yoghurt, soy sauce and sourdough, lactic acid is widely used in the food industry as a pH regulator, preservative, or flavouring agent. Also known as “milk acid,” it is commonly used in beer brewing to lower pH and increase body, and in beverages, cocktails and confectionery to impart a sour note.
