A clear, colourless, and sweet-tasting liquid used by bakers and pastry chefs to lock in moisture and naturally extend the shelf life of food. When added to cakes, muffins, and sponges, it prevents the bake from drying out, ensuring the texture stays soft and fresh for several days longer.

In decorating and confectionery, it prevents sugar from crystallising to keep fondant icing pliable and stop royal icing from becoming brittle. It is also used to add a high-gloss shine to chocolate glazes or ganache and acts as a stabiliser in sorbets and ice cream to prevent ice crystals, making them easier to scoop.
