Considered by many to be the finest anchovies in the world, these fillets are crafted exclusively from spring-caught fish from the Cantabrian Sea and proudly carry the CC Calidad Controlada “Anchoa de Cantabria” seal. Produced entirely in Cantabria, each anchovy is carefully salted and matured until its peak ripeness.
Once ready, every fish is hand-scrubbed with nets, one by one, to remove its skin before being cut, washed, and delicately filleted. Finally, the fillets are preserved in olive oil to enhance their silky texture and rich, elegant umami flavour.
Enjoy them simply on a toasted slice of sourdough, or create a classic Gilda pintxo with Perelló olives and Maestros Aceituneros Guindillas Peppers.
